White pepper is obtained from the processing of the fruits of Piper nigrum , a plant belonging to the Piperaceae family. For the production of white pepper, the berries of Piper nigrum they are picked almost ripe (when they appear large and reddish) and are left to macerate in water to cause the external casing to detach. The cleaned grains are subsequently dried and at the end of processing they are smaller than those of black pepper and with a much more delicate flavour. The beneficial properties of white pepper derive from the presence of piperine and are completely similar to those of black and green pepper.

In the Kitchen : The flavor of white pepper is lighter and sweeter than black pepper. Its grains are smaller, more fragrant and less spicy, which is why it goes perfectly with fish-based dishes (very good in first courses with seafood) or white meats. It is also used to flavor sauces, boiled potatoes and pickles. Due to its sweet and subtle aroma it also lends itself well to original combinations, for example with fruit to create a fresh dessert strawberry dessert or with the tofu .
