Bartolomeo Scappi, in his treatise "Work of the art of cooking", refers to the mortar saying: "To make pestinous pulps in a smooth marble or porcelain mortar, because other stone is not so good at doing this, because which dries up, and withdraws to itself, and especially the travertine: pounded with a wooden piston that is not bitter like walnut, and other woods."

In fact, the smooth marble mortar is the best as, unlike other stones, it is non-porous, just as the choice of wood for the pestle is successful.
