Beef rub is a blend born in the small town of Patagonia, between Mexico and Arizona, and is now famous throughout the United States. Legend has it that it dates back to the Golden Age, when the only way to cook bison meat was by placing it over a burning coal.

In the Kitchen : Rub bison, buffalo, or beef meat with a dry breading. Cook until it forms a thick, succulent crust.
