The sel de Guérande is an integral salt coming from the very ancient salt pans of Guérande which in turn is a municipality located in the north-western part of France, in the region called Pays de la Loire. The name, in Breton Gwenrann, means "white village" in reference to the salt marshes for which not only the municipality of Guérande but also the entire small peninsula of which it is the heart has been famous since ancestral times. The typical pearl gray color of this edible sea salt depends on the clay in which the crystallization process takes place. It is a salt very rich in trace elements, first of all magnesium, while in its composition there is little sodium. The flavor is delicate (less salty than other natural sea salts) and is characterized by light floral notes. A curiosity: the French king Louis XIV only wanted this salt on his table because he loved the delicate violet aftertaste.
