Szechuan pepper

Szechuan Pepper, also called Fagara, is not actually a pepper, but is a very dark red berry from China. After removing the small bitter seeds inside them, the berries are left to dry in the sun. The flavor of Szechuan Pepper is fresh, with a light hint of lemon flavour.

In the Kitchen : Perfect with wild asparagus, but surprising with veal. Also ideal for chocolate mousse and pineapple sorbets.
