Chimichurri is a mixture of herbs and spices born in Argentina, which has spread throughout South America and Northern Europe. The birth of this mixture is shrouded in mystery, one of the most widespread versions attributes its creation to the gauchos, the herdsmen of the South American pampas, who invented this condiment to flavor grilled beef. Another theory suggests that the name "chimichurri" comes from a corruption of "Jimmy's curry", referring to an Irishman named Jimmy McCurry who reportedly participated in Argentina's fight for independence in the 19th century. McCurry would have been a promoter of salsa, but since his name was difficult for locals to pronounce, over time it would morph into "chimichurri"
