For each food there is a knife suitable for cutting it: there are knives for fish, bread, vegetables and ham. You need a suitable knife, very sharp, extra thin, with a flexible blade and a round tip. The ham knife can also be used for slicing salmon, roast beef and other types of meat.
The blade of a ham knife is usually made of stainless steel, not very wide and with a rounded tip; the low blade guarantees greater flexibility than the high one; it must also be long and thin, to obtain a precise cut, even horizontally.
With a ham knife you get incredibly thin slices; you avoid crumbling them, as would happen for example using a serrated knife. Furthermore, the flexibility allows you to reach all parts of the ham. Furthermore, unlike a normal kitchen knife, the ham knife allows you to perform the cutting operation without exerting excessive pressure; it is therefore possible to cut effortlessly, maintaining control over the thickness of each individual slice. A thinly sliced slice of ham tends to melt in the mouth allowing you to fully appreciate its aroma and flavour.
