Cumin seeds have carminative and digestive properties and are a good natural remedy against abdominal swelling and colic. With a distinctive and easily recognizable flavour, cumin is slightly acidic and bitter, releasing a warm and vaguely sweet flavour.
In the Kitchen : An excellent herbal tea to drink at the end of a meal to aid digestion can be prepared with the seeds, a pinch of fennel and a little mint, also very useful against coughs. When using cumin seeds in savory dishes, one of the most common methods to enhance their flavor is roasting. This process, which can be done in a dry pan over medium-low heat until aromatic and slightly dark, releases the essential oils contained in the seeds, intensifying their aroma and flavor. In Indian cuisine, they are often added at the beginning of the cooking process along with other flavorings such as curry, to flavor oils and ghee, creating an aromatic base for dhal, vegetable or meat curries.
