Goa Curry is distinctly different from all other Indian spice blends. This is because the spices that compose it are whole, so as to have a taste that is not excessively strong but rather sweet, because the amount of chili contained in the Goa spice mixture is very minimal. We can define its aroma halfway between sweet-spicy.
In the Kitchen : To enhance the flavor of whole spices, it is advisable to lightly toast them in a pan over medium-low heat, without adding oil. This process releases the essential oils present in the spices, intensifying their aroma and flavor. Be careful not to burn them, because it would give the dish a bitter taste. It can then be pulverized in a mortar and used as a normal curry mixture for chicken or firm-fleshed fish, but also for shellfish in combination with classic basmati rice.
