CHILI PEPPER - MEXICO Ideal for grilled meats, sauces, spicy sauces, meat sauce. Perfect for a classic of Italian cuisine: pasta seasoned with garlic, oil and chilli pepper. It adds both the right spiciness and a pleasant aroma to dishes.
STAR ANISE – CHINA – It is known for its star shape and for its balsamic and mentholated taste. Its seeds contain all the scent and aroma of this berry; they are perfect both to add to meat or fish dishes, and as an infusion, through which they release all their antiseptic and digestive properties.
CINNAMON POWDER – CEYLON - It is mainly used for sweet preparations: cakes, biscuits, fruit, candies and creams. Furthermore, it can give a special touch to ice cream, fruit salad and ricotta. Many drinks are characterized by the spicy aroma of cinnamon, such as mulled wine, sangria, liqueurs and punch. It is a powerful natural antioxidant, stimulates blood circulation, helps fight cholesterol, has antibacterial, antiseptic, stimulating and digestive properties.
CLOVES – ZANZIBAR - They have local anesthetic and analgesic properties, they are a remedy for fatigue and headaches. It is a spice from the islands of the Indian Ocean, used for pastry products, but it is also excellent with meat dishes, especially game.
CORIANDER - INDIA - Stimulates digestion and appetite, soothes abdominal discomfort, promotes the expulsion of intestinal gas. Ideal for marinades with seafood and fish, excellent in desserts or sprinkled on slices of fresh pineapple.
CUMIN – SYRIA - It has carminative and digestive properties, it is a good natural remedy against abdominal swelling and colic and it is also very useful against coughs. An excellent herbal tea to drink after a meal, to aid digestion, can be prepared with its seeds, a pinch of fennel and a little mint. Slightly acidic, it is ideal in beef stews and to try in a citrus salad.
TURMERIC – INDIA - Turmeric is the powdered root of Curcuma longa. Recent studies have shown that curcumin, the active ingredient contained in the spice, has anticancer properties, inhibiting the growth of different types of cancer cells. Among other characteristics, turmeric is antithrombotic, anti-inflammatory, choleretic, cholagogue and hypocholesterolemic and is rich in antioxidants. Originally from Asia, it is widely used in Indian and Thai cuisine, and has also been used as a dye since ancient times.
YELLOW MUSTARD POWDER – UKRAINE – This spice is mainly used for the production of cream mustard which accompanies numerous dishes throughout the western world. It is a source of minerals such as calcium, magnesium, selenium, phosphorus, potassium and vitamins. In the form of powder it can also be used for marinades and rubs.
GALGANT – ASIA - It is a spice similar to ginger but sweeter and more citrusy. It is used in Eastern dishes and in Western preparations as an alternative to ginger. Galgant is used for meats, such as chicken and turkey, vegetables, soups, delicate fish and rice dishes. Excellent pairing with nutmeg and garlic.
NUTMEG – SRI LANKA – It has antioxidant properties, it has numerous active ingredients that find therapeutic applications for their antifungal, antidepressant, digestive and carminative properties. Fundamental in the preparation of béchamel, it is well suited for flavoring meat sauce, mashed potatoes and some desserts.
SWEET PAPRIKA – HUNGARY - It has tonic properties, stimulates the digestive system and facilitates digestion, is antiseptic and strengthens the circulatory system. Contains vitamins E, B, C, K and beta-carotene. Among the minerals we find calcium, iron, phosphorus, magnesium, manganese, potassium, selenium and sodium. In addition to being a basic ingredient in the preparation of Goulash, it is also indicated with white meats, fresh cheeses and soups.
SMOKED SWEET PAPRIKA – HUNGARY – It is an excellent spice deriving from a particular type of chilli, which is dried on precious woods. This process gives the paprika its characteristic sweet and savory aroma and flavour, making it an indispensable condiment for flavoring sauces and sauces, but also fish and meat.
SUMAC – TURKEY - The fruits, harvested before they reach maturity, are dried and once minced they give life to a spice with a sour taste, particularly used in Middle Eastern cuisine: Lebanese and Syrians use it to flavor fish; Iraqis and Turks add it to salads; Iranians and Georgians season kebabs there. Ideal with lentils, chicken fillings, onions and yoghurt sauces.
GINGER - NIGERIA - It has the ability to combat nausea and vomiting, it is a powerful painkiller capable of relieving rheumatic pains, fights colds and is a valid support for headaches. It has a strong and quite spicy flavor. Ideal with grilled fish, but also in the preparation of biscuits and puddings. Ground dry ginger has the same properties as fresh ginger.
JUNIPER BERRIES – BULGARIA - They are used in the kitchen especially as a spice for game dishes (especially ducks and pheasants) and for sauerkraut. They are also the basis for the production of spirits such as gin, juniper grappa, juniper and Kranewitter (traditional South Tyrolean product). Finally, an essential oil called juniper essence is extracted from the Juniper Berries by distillation. The distillation residue, treated with water and concentrated under vacuum, produces a syrupy liquid called juniper extract.
