Sel de Guèrande is a whole salt from the ancient salt marshes of Guérande, which in turn is a municipality located in the north-western area of France, in the region called Pays de la Loire. The name, in Breton Gwenrann, means "white country" in reference to the salt marshes for which not only the municipality of Guérande but also the entire small peninsula of which it is the heart has been famous since ancient times. The typical pearl gray color of this edible sea salt depends on the clay in which the crystallization process takes place. It is a salt very rich in trace elements, first of all magnesium while in its composition there is little sodium. The flavor is delicate (less salty than other natural sea salts) and is characterized by light floral notes. A curiosity: the king of France Louis XIV wanted only this salt on his table because he loved the delicate violet aftertaste.
In the Kitchen : Excellent for salting meat and fish, such as smoked salmon. It can be used to make bread, focaccia and other baked goods, where its unique flavor can make the difference.
