Nigella - Spice per Fish

Nigella is a spice native to South West Asia and is cultivated in many parts of the world for its small aromatic seeds, which are used both as a spice in cooking and for their medicinal properties. Among the benefits attributed to nigella seeds are antioxidant, anti-inflammatory, antibacterial and antiviral properties. They have also been studied for their potential effect in improving immune system health, regulating blood sugar levels, and relieving allergy symptoms. Nigella seeds are black in color, slightly triangular in shape and have a unique flavor reminiscent of a combination of onion, black pepper and oregano, with a slight bitter aftertaste.

In the Kitchen : These seeds can be used to flavor bread and focaccia, such as the famous Indian naan bread or Middle Eastern pita and savory biscuits. They are at their best in salads, pickles, sandwiches and vegetable creams. They pair well with fish, white meat and vegetables.
