Tajine cooking is a traditional form of North African cooking, named after the eponymous conical earthenware vessel in which food is cooked. The tagine is composed of two parts: a flat, round base with low edges, and a conical or dome-shaped lid. This particular design facilitates the circulation of steam during cooking, keeping the food tender and juicy. Inside, the meat and fish are flavored with a combination of spices and herbs, such as ginger, cumin, cinnamon, coriander, and turmeric.
In the Kitchen : The Tajine, in addition to being a container for cooking, is also the name of the dish that is prepared inside it, which can be based on meat such as lamb, pork and beef, or fish such as squid, prawns, cuttlefish and blue fish.
