Curry Chickpeas

    1. In a large skillet, heat two tablespoons of oil and fry the onion and garlic until translucent.
    2. Add the curry, turmeric and cumin, letting the spices toast for a minute to bring out the flavours.
    3. Add the drained and rinsed chickpeas together with the peeled tomatoes. Mix well to mix all the ingredients.
    4. Let it cook over medium-low heat for about 20 minutes, until the sauce has thickened. If necessary, add a little water to keep the mixture from drying out too much.
    5. Taste and add salt and pepper. You can add a pinch of sugar to balance the acidity of the tomatoes.
    6. Serve the chickpea curry hot, garnished with fresh coriander leaves and accompanied by basmati rice or naan bread.
